Zesty Black-Eyed Pea Salad

A wonderful staple in the black community! BLACK EYED PEAS!!!

This recipe is exactly what you need this summer. A light salad that packs a powerful punch!

Ingredients for Salad

Steps

  1. In a small bowl, whisk together the balsamic vinegar, oil, salt, lime juice, sugar, salt, and pepper to make the dressing.
  2. In a large bowl, toss together the beans, corn, bell pepper. Pour the dressing over the salad and toss to combine.
  3. Add in the chopped cilantro and toss lightly to combine. Try a fork-full and add more salt, pepper, or cilantro to taste
  4. Chill in refrigerator for at least 30 minutes before serving. Can be stored in the refrigerator for up to 3 days.
